What a name for a salad! It's actually quite good as I've made it for countless picnics, church and school functions. It's a particular favorite. We served this salad at that good-bye party as described in Chapter 17 of Back to the Frollo. Enjoy!
In a large salad bowl, layer the following:
1 large head of lettuce. torn into bite-size pieces
1 head cauliflower, use the flowerets––break or cut these into pieces
2 C Miracle Whip, or, similar product (mayo will not work!)
1/2 C diced onion, Bermuda, Spanish, or Vidalia (don't use those cheap yellow ones)
12 oz. bacon, fried then crumbled (You can cook this in the microwave – less time and mess)
1/3 C grated Parmesan cheese (canned is OK)
Put the assembled salad in the fridge overnight. Toss lightly before serving.
My Claude loves this salad, although he would prefer I make the dressing from scratch. Hey! What can I say...I'm a child of the 20th Century. Convenience foods save the day anytime! :-)
